Italian Sausage Tortellini Casserole is a simple and inexpensive take on a classic Italian dish. With just a few minutes prep and minimal cook time, this tasty meal is perfect for busy weeknights.
Boil the tortellini according to package directions in a large pot for 3 minutes, then drain water and add cooked tortellini to a large bowl.
Cook the italian sausage in a medium skillet over medium heat, breaking the meat apart as it cooks, until no longer pink. Drain the grease and add the meat to the bowl with tortellini.
Add the seasonings, parmesan cheese, and pasta sauce. Toss to coat.
Grease an 8x8 inch casserole dish and pour the mixture into it, spread to an even layer.
Top with mozzarella cheese and cover with aluminum foil. Bake for 20 minutes, remove foil and broil until cheese is perfectly melted.
Chop a little bit of parsley to garnish if desired.
