Chicken Enchilada Pinwheels
These Chicken Enchilada Pinwheels are a flavorful twist on a classic favorite, filled with tender chicken, creamy cheese, and zesty seasonings. Ingredients
- 4 large flour tortillas
- 8 oz cream cheese
- 1.25 oz packet taco seasoning
- 1 tsp minced garlic
- 2 cups shredded cooked chicken
- 1 ½ cups cheddar cheese shredded
- 10 oz can Rotel with green chilis well drained
- 4 green onions sliced
Instructions
- In a small bowl, combine the cream cheese, minced garlic, and taco seasoning, until well mixed.
- Lay out the tortillas, and divide the mixture evenly between them, then spread over the surface of the tortillas.
- Sprinkle chicken over the tortillas, then cheese, followed by the Rotel and green onions.
- Start from one end of the tortilla, and roll it into itself, until it meets the other end.
- Wrap in plastic wrap, and refrigerate for 1 hour, or until ready to serve.
- Once ready to serve, remove the plastic wrap, and cut each tortilla roll into 6 one inch pieces, discarding the ends (or snacking on them!)
