Heart Jelly Cookies are classic thumbprint-style cookies with hearts filled with sweet fruit jam. The soft, buttery cookie pairs perfectly with the bright, glossy jelly center.
Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.
Add the butter and sugars to a large bowl and beat on medium-high speed for 3 minutes. The beat in the egg yolks, almond extract and salt.
Add the flour and little at a time and mix. Once all the flour is added and mixed, put some disposable gloves on and form the dough together.
Then use a 1 1/2 tablespoon cookie scoop to gather dough. Roll the dough into a ball and arrange on a baking sheet 2 inches apart. Press into the ball with the tip of your finger, then again the opposite way; to form a heart.
Fill each heart with jam.
Transfer the baking sheet to the oven and bake for 13-15 minutes, until the bottom is just golden.
Allow cookies to cool on the baking sheet for 5 minutes before transferring them to the cooling rack.
