Sheet Pan Mini Meatloaf and Veggies is a simple, all-in-one dinner made with juicy mini meatloaves and perfectly roasted vegetables. Baking everything on one pan keeps prep easy and cleanup quick.

Ingredients

lean Ground Beef

Bread crumbs

Egg

Salt

Garlic powder

Onion powder

Ketchup

Brown sugar

medium potatoes
diced

fresh green beans

Olive oil
Instructions
Preheat the oven to 400 degrees.
Dice the potatoes into small cubes. Trim the ends off the green beans.
Mix the seasonings together in a small bowl.
Combine the ground beef, bread crumbs, egg and half the seasonings in a bowl, then shape into 4 mini meatloaves. Arrange on a large baking sheet.
Mix the ketchup and brown sugar together in a small bowl and brush over the mini meatloaves.
To a large bowl, combine the potatoes, green beans, olive oil and the rest of the seasonings. Pour onto the sheet pan.
Bake for 25-30 minutes.
