Puff Pastry Brie Cranberry Bites

These Puff Pastry Cranberry Brie Bites are one of those appetizers that look a little fancy but are actually incredibly easy to make. You get flaky, golden puff pastry, creamy melted Brie, and sweet-tart cranberry sauce all in one little bite.

They’re perfect for Thanksgiving, Christmas, holiday parties, or really any time you need an easy appetizer that feels a little special. Add a sprinkle of chopped pecans and fresh thyme, and you’ve got a pretty little appetizer that takes very little effort.

Ingredients

You will need the following items to make this recipe:

  • Measuring cups and spoons
  • Cutting board
  • Rolling pin
  • Knife
  • 12-cavity muffin pan

Ingredients

  • 1 sheet puff pastry, thawed (I used one sheet from the 17.3 oz package)
  • 4 oz Brie
  • 1/2 cup cranberry sauce
  • 2 tablespoons chopped pecans
  • Fresh thyme, for garnish

Steps

Preheat the oven. Preheat your oven to 350°F and grease a 12-cavity muffin pan.

Cut the Brie. Cut the Brie into 12 pieces. They don’t need to be perfectly even—just enough so that each pastry cup gets a piece.

Prepare the puff pastry. Unfold the thawed puff pastry and roll it out just a little to smooth it out. Cut it into 12 pieces by making 4 rows and 3 columns.

Fill the muffin pan. Gently press one piece of puff pastry into each muffin pan cavity.

Add the Brie and cranberry. Place a piece of Brie into each pastry cup, then spoon a little cranberry sauce over the top.

Add the pecans. Sprinkle the chopped pecans over each bite.

Add the thyme. Sprinkle a little fresh thyme over the tops for some extra flavor.

Bake. Bake for 22–25 minutes, or until the puff pastry is golden brown and the Brie is melted and bubbly.

Garnish and serve. Add a little extra fresh thyme just before serving, then enjoy these warm and melty bites!

  4. Put each piece into the muffin tin cavity.
  5. Add a piece of brie to each, then top with a little cranberry sauce.
  6. Sprinkle chopped pecans over the top.
  7. Sprinkle with a little fresh thyme for the flavor. 
  8. Bake for 22-25 minutes, until golden.
  9. Sprinkle with just a little extra fresh thyme for garnish.
